I am thinking of getting either the quintessential 15x8 steel rally's with trim rings and center caps, or the 1989 blazer style aluminum rims that look like the baja wheels, or wagon wheels.

That tire size is actually recommended for an 8" wide wheel. Some shops won't mount them on the 7" Sports. 235/75 on 7" wide wheels is the stock size for all C1500's.
